Salem hills has one of the most beginner friendly introductions to singletrack riding in the cities. There are only 4.5 miles total and that's broken into 3 loops so there are tons of opportunities to just "wait in the parking lot" if you decide it's not for you at any point. There are very few roots and rocks and what few man-made features exist (jumps/ wooden obstacles) all have a path that detours right around them so you aren't forced to even walk your bike to tap out on such things.

Although it's possible for someone experienced to do this whole trail with a pure road bike with super skinny tires... that's certainly "hard mode". It's recommended to have at least gravel bike tires with some tread on the sides, around 40mm wide at a minimum for beginners. No suspension on the bike is needed for this sort of trail, but it does make your arms hurt less :)
